RECIPE A major complaint in my family with whole wheat pancakes, etc, was that they were too heavy. Separating and folding in beaten, stiff egg whites makes all the difference in the world. Add some buckwheat flour, oatmeal, flax meal to this basic recipe for some variety. Whip up some cream and make fresh apple sauce in your Bullet to top these with and the children will ask for them often. For waffles the batter should be a little thinner. Our Sunday PM tradition is waffles, covered with maple syrup, fruit and whipped cream. When you get your maple syrup from Costco (cheapest I can find) dilute in with ¼ cup of water which makes 10% cheaper and no one knows the difference.
Whole Wheat Waffles/Pancakes 2 C WW flour, 2 egg yokes, separated 2+ cups of buttermilk, or less milk and add water ¼ t baking soda ⅛ t baking powder ¼ t salt Fold in beaten whites when everything else in beaten and smooth.
